Sea of Thieves is a good game... if it was in early access. Otherwise it's lacking a lot of content.
No character creator, only selectable three ships, a gameplay loop which is basically nothing but fetch quests. It's got the potential to be a really great game, but there's nothing there. Sailing around is really fun, but that can only hold your attention for so long.

Considering the success of Sea of Thieves, I think it just goes to show how much people enjoy playing a game with other people. I must admit, I wouldn't have played the game myself for as long as I did, if I wasn't playing with someone else.

Still, it's kind of a shame how far games have fallen if this is considered an acceptable standard of content. I shouldn't be able to point to thirty year old games with more content, gameplay, and complexity. I mean, imagine playing games in the late 90s, and being able to point to games from the early 80s and say "Those games have more going on in them." It'd be weird, right? Because when hardware got better and game designers learnt what was and wasn't good design, games got more complex, more content, and better gameplay. Why the F**K can I point to games from the early 90s that are more complex, have more content, and have better gameplay, than popular AAA games released now in the 2020s! Where budgets for games are through the roof!
And in case you're wondering what games I'm talking about, Sid Meier's Pirates and Uncharted Waters New Horizons. (I don't expect Sea of Thieves to have the exact same gameplay of those two, but to at least be able to match them.)
Sea of Thieves is like Pirates of the Carribean Online, if it controlled better and was missing some content. Which is kinda... sad.

Still, it's a fun game. I'd recommend giving it a play if you have gamepass or something. It's just not worth sinking countless hours into. Which might be exactly what you're looking for.
